A light and refreshing salad featuring cucumber, shrimp, and a tangy lime dressing that brings summer flavors to your table.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cucumbers, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cucumbers, finely chopped red onion, and fresh cilantro. Toss gently to mix.
  2. In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Once the shrimp are cooked and cooled, add them to the vegetable mixture and gently fold.
  4. Pour the dressing over the mixture and toss to coat evenly.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Store leftovers in an airtight container for up to 2 days. Cucumber may release water, so stir before serving again.
