Ingredients

  • 2 grilled chicken breasts, sliced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the cooked rice, grilled chicken, diced cucumber, halved cherry tomatoes, sliced red onion, olives, and crumbled feta cheese in a large bowl.
  2. Prepare the dressing by whisking together olive oil, lemon juice, salt, and pepper in a small bowl.
