A delicious and comforting Frito Pie featuring ground beef, cheese, and crunchy corn chips that brings joy to any gathering.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 cups corn chips (Fritos)
  • 1 can black beans, drained and rinsed
  • 1 cup sliced jalapeños (optional)
  • Sour cream and chopped green onions for serving

Instructions

  1. Brown the ground beef over medium heat in a large skillet, draining any excess fat.
  2. Stir in the taco seasoning and diced tomatoes, cooking for an additional 5 minutes.
  3. Layer half of the corn chips in a baking dish, spread the beef mixture on top, followed by black beans and half of the cheese.
  4. Top with remaining corn chips and cheese.
  5. Bake in a preheated oven at 350°F (175°C) for 10-15 minutes until cheese is melted and bubbly.
  6. Garnish with jalapeños, sour cream, and green onions before serving warm.

Notes

Can be made vegetarian by substituting ground beef with lentils or sautéed mushrooms. Great to serve with a salad or guacamole.
