Deliciously fudgy brownies made with sweet potatoes for a guilt-free dessert that is packed with flavor.

Ingredients

  • 1 cup cooked and mashed sweet potato
  • 1/2 cup almond butter (or any nut butter)
  • 1/2 cup cocoa powder
  • 1/3 cup maple syrup (or honey)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, combine the mashed sweet potato and almond butter until smooth.
  3. Add the cocoa powder, maple syrup, vanilla extract, salt, and baking powder. Mix until well combined.
  4. If using, fold in the chocolate chips.
  5. Pour the batter into the prepared pan and spread it evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan before cutting into squares.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Can freeze for up to a month.
