Delightful cake-like cookies filled with creamy marshmallow fluff and colorful rainbow sprinkles, perfect for any celebration.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rainbow sprinkles
  • 1 cup marshmallow fluff
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Mix the all-purpose flour, cake flour, baking powder, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet mixture, mixing until combined. Fold in the rainbow sprinkles.
  5. Drop rounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool completely on a wire rack.
  7. Mix together the marshmallow fluff, powdered sugar, and vanilla extract for the filling until smooth.
  8. Spread the filling on the flat side of half of the cookies and sandwich with the other half.
