A delightful meal combining juicy chicken and tender potatoes infused with garlic and fresh herbs, perfect for weeknight dinners or special occasions.

Ingredients

Scale
  • 1 whole chicken (about 45 pounds)
  • 2 pounds baby potatoes
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix melted butter, minced garlic, rosemary, thyme, salt, and pepper.
  3. Place the whole chicken in a roasting pan. Rub the garlic butter mixture all over the chicken and under the skin.
  4. Arrange the baby potatoes around the chicken. Drizzle any remaining butter mixture over the potatoes and season with salt and pepper.
  5. Place lemon slices inside the cavity of the chicken.
  6. Roast in the preheated oven for about 75 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 10 minutes before carving. Serve warm with roasted potatoes.

Notes

For crispy skin, avoid covering the chicken while it roasts. You can add other vegetables like carrots or green beans to the pan for a complete meal.
