Quick and delicious garlic butter steak bites paired with tender zucchini, ready in just 15 minutes.

Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the steak: Pat the steak bites dry with paper towels and season them generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers.
  3. Sear the steak bites in a single layer for 1-2 minutes on each side until browned. Remove from the skillet and set aside.
  4. Melt the butter in the same skillet over medium heat until bubbly.
  5. Sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
  6. Cook the zucchini in the skillet for about 3-5 minutes until tender-crisp.
  7. Combine the seared steak bites back into the skillet and toss everything together.
  8. Cook for an additional 1-2 minutes until the steak is heated through.
  9. Garnish with fresh parsley if desired and serve immediately.

Notes

Serve over rice or quinoa, and pair with a fresh salad or crusty bread. Red wine complements the meal well.
