  • 1 pound steak (ribeye or sirloin)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 cloves garlic whole and lightly crushed
  • 2 cloves garlic minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Remove the steak from the refrigerator and let it rest at room temperature for 20 minutes.
  2. Generously season both sides of the steak with salt and black pepper.
  3. Heat the olive oil over medium-high heat in a large skillet until it shimmers.
  4. Add the seasoned steak to the skillet and sear for 3-4 minutes on each side for medium-rare.
  5. Reduce the heat to medium-low, add the unsalted butter and crushed garlic cloves, and baste the steak for 1-2 minutes.
  6. Transfer the steak to a plate and cover loosely with foil to rest.
  7. Pour off excess fat from the skillet, then add the minced garlic and cook over medium heat for 30 seconds.
  8. Stir in the heavy cream, bringing it to a gentle simmer; whisk in Parmesan cheese and Dijon until smooth, about 2-3 minutes.
  9. Taste the sauce and adjust seasoning with salt and pepper as needed.
  10. Slice the steak against the grain and serve topped with the Parmesan cream sauce and garnished with parsley.
