A vibrant medley of roasted vegetables, drizzled with olive oil and seasoned with garlic and herbs, perfect as a side dish or for adding to salads and wraps.

  • 2 cups Potatoes, chopped
  • 2 cups Carrots, chopped
  • 2 cups Zucchini, chopped
  • 3 tablespoons Olive oil
  • 3 cloves Minced garlic
  • 2 teaspoons Italian herbs
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Paprika

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop the potatoes, carrots, and zucchini into chunky pieces.
  3. Toss the vegetables with olive oil, minced garlic, Italian herbs, salt, pepper, and paprika until well coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  6. Serve alongside your choice of chicken, beef, or fish.

Notes

Let the prepped vegetables sit for 10 minutes after adding oil and seasonings for better flavor. Feel free to add red pepper flakes for a spicy kick.
