  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 34 cloves garlic, minced
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, making sure not to let it burn.
  3. Pour in the chicken broth and bring the mixture to a boil, allowing the flavors to meld beautifully.
  4. Add the shredded chicken and let it simmer for about 10 minutes so all the flavors can combine.
  5. Lower the heat and stir in the heavy cream and grated Parmesan cheese until the soup is creamy and smooth.
  6. Season the soup with salt and pepper to taste, adjusting as you go until it’s just right for your palate.
  7. Cook until the soup is heated through. It should be wonderfully warm and inviting!
  8. Serve the soup warm, garnished with fresh parsley for that pop of color and additional flavor.

Notes
