A delightful baked alternative to traditional beignets, soft and fluffy with a sweet glaze, perfect for breakfast or an afternoon snack.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking dish.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Mix the buttermilk, milk, egg, melted butter, and vanilla extract in another bowl.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Transfer the batter into the prepared baking dish and spread evenly.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Prepare the glaze by whisking together powdered sugar and milk until smooth.
  8. Cool the beignet squares in the pan for 10 minutes before transferring to a wire rack.
  9. Glaze the warm squares before serving.

Notes

These squares can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
