Soft and pillowy beignet squares coated with a sweet glaze, reminiscent of the cafes in New Orleans.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup buttermilk
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Oil for frying
  • 2 cups powdered sugar (for glazing)
  • 3 tablespoons milk (for glazing)

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  3. Gently fold the wet ingredients into the dry ingredients until just combined.
  4. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  5. Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  6. Remove the beignets from the oil using a slotted spoon and drain on paper towels.
  7. Whisk together powdered sugar and milk to make a smooth glaze.
  8. Dip the warm beignets into the glaze and serve immediately.

Notes

For a dairy-free version, use non-dairy milk with a tablespoon of vinegar as a substitute for buttermilk.
