  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions

  1. Seasoning the Chicken: Season the chicken breasts generously with salt, pepper, minced garlic, fresh thyme, and rosemary.
  2. Searing the Chicken: Heat olive oil in a skillet over medium heat. Place the seasoned chicken breasts in the skillet and cook until golden brown and cooked through—about 6-7 minutes on each side.
  3. Creating the Glaze: In a bowl, mix together chicken broth, soy sauce, and honey. Pour this mixture into the skillet once the chicken is browned. Let it simmer until the sauce thickens.
  4. Boiling the Potatoes: Boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain well.
  5. Mashing to Perfection: Return the drained potatoes to the pot and add milk and butter. Mash until creamy and smooth.
  6. Final Assembly and Serving: Place a scoop of mashed potatoes on each plate, top with glazed chicken, and drizzle with pan sauce.
