  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest

  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat the oven and prepare dry ingredients. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the flour, baking powder, and salt.
  2. Cream the butter and sugar. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add wet ingredients. Beat in the egg, lemon zest, lemon juice, and vanilla extract.
  4. Combine wet and dry ingredients. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Drop dough onto baking sheet. Using a spoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake to perfection. Bake for 10-12 minutes until the edges are lightly golden.
  7. Cool completely. Let the cookies cool on the baking sheet before transferring them to a wire rack.
  8. Prepare the zesty glaze. Mix powdered sugar with 1-2 tablespoons of lemon juice until smooth, then drizzle over cooled cookies.

Store leftover cookies in an airtight container at room temperature for up to a week. Use fresh lemons for best flavor.
