4 slices of bread
100g goat’s cheese
200g Tenderstem broccoli
50g walnuts
50g fresh basil
2 cloves garlic
50g Parmesan cheese
60ml olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 180°C (350°F).
Bring a pot of salted water to a boil, then blanch the Tenderstem broccoli for 2-3 minutes until tender yet vibrant green. Drain and cool under cold running water.
In a food processor, combine walnuts, fresh basil, garlic, Parmesan, and olive oil. Blend until smooth. Season with salt and pepper.
Toast the slices of bread until golden and crispy.
Spread a generous layer of walnut pesto over each piece of toasted bread. Crumble goat’s cheese on top, and layer the blanched Tenderstem broccoli over the cheese.
Place the assembled toast on a baking sheet and bake for 5-7 minutes until the cheese warms through.
Serve warm and enjoy!
Notes
For a kick of spice, add chili flakes to the pesto. Use gluten-free bread for a gluten-free option.
