A delightful toast featuring creamy goat’s cheese, vibrant Tenderstem broccoli, and rich walnut pesto, ideal for brunch or a relaxing dinner.

Ingredients

  • 4 slices of bread
  • 100g goat’s cheese
  • 200g Tenderstem broccoli
  • 50g walnuts
  • 50g fresh basil
  • 2 cloves garlic
  • 50g Parmesan cheese
  • 60ml olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Bring a pot of salted water to a boil, then blanch the Tenderstem broccoli for 2-3 minutes until tender yet vibrant green. Drain and cool under cold running water.
  3. In a food processor, combine walnuts, fresh basil, garlic, Parmesan, and olive oil. Blend until smooth. Season with salt and pepper.
  4. Toast the slices of bread until golden and crispy.
  5. Spread a generous layer of walnut pesto over each piece of toasted bread. Crumble goat’s cheese on top, and layer the blanched Tenderstem broccoli over the cheese.
  6. Place the assembled toast on a baking sheet and bake for 5-7 minutes until the cheese warms through.
  7. Serve warm and enjoy!

Notes

For a kick of spice, add chili flakes to the pesto. Use gluten-free bread for a gluten-free option.
