Ingredients

Scale
  • 2 lbs chicken thighs or breasts
  • 3 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Prepare the Marinade: In a large bowl, combine gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, salt, and pepper. Mix well to create a fragrant marinade.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or overnight for better flavor.
  3. Preheat the Oven: Preheat the oven to 400°F (200°C), filling your kitchen with the warmth of anticipation.
  4. Arrange the Chicken: Take the marinated chicken from the refrigerator and arrange it on a baking sheet lined with parchment paper, making sure each piece has space around it for even cooking.
  5. Bake the Chicken: Bake for 25-30 minutes, or until the chicken is cooked through and has beautiful caramelization on the outside.
  6. Garnish and Serve: Garnish with chopped green onions if desired and serve hot, allowing the vibrant colors to catch the eye of everyone at the table.

Notes

Letting the chicken marinate overnight enhances the flavors. Keep an eye on the chicken to avoid overcooking.
