Delightfully crispy roasted baby potatoes, infused with garlic and fresh herbs, perfect as a comforting side dish.

Ingredients

  • 2 pounds baby potatoes
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh dill (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. Toss the halved potatoes with olive oil, minced garlic, chopped dill, chopped parsley, salt, and pepper.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, until golden and crispy.
  6. Serve warm and enjoy!

Notes

For extra crispy potatoes, soak them in water for 30 minutes before roasting.
