Deliciously gooey muffins filled with a creamy cream cheese and brown sugar center, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 4 oz cream cheese, softened
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl until well blended.
  3. Mix the milk, vegetable oil, and egg in another bowl until well mixed and frothy.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; it’s okay if there are a few lumps.
  5. In a small bowl, mix the softened cream cheese, brown sugar, and vanilla extract until smooth and creamy.
  6. Fill each muffin cup halfway with batter, add a spoonful of cream cheese mixture on top, and cover with more batter until about 2/3 full.
  7. Bake for 18-20 minutes, or until golden brown and a toothpick comes out clean.
  8. Let the muffins cool for a few minutes in the pan, then transfer to a wire rack to cool completely before serving.

Notes

For extra gooeyness, ensure the cream cheese is properly softened. Customize the muffins by adding nuts or dried fruits.
