Ingredients

  • 2 cups cooked rice or quinoa
  • 2 grilled chicken breasts, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • Feta cheese, crumbled
  • Olive oil
  • Lemon juice
  • Dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked rice or quinoa with olive oil, lemon juice, and dried oregano. Give it a good stir!
