A healthy and satisfying bowl filled with grilled chicken, fresh veggies, and creamy tzatziki, perfect for any meal.

Ingredients

  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Cucumber, grated
  • 2 Tomatoes, diced
  • 1 Red onion, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Chickpeas
  • 1 cup Brown rice or quinoa
  • 1 cup Greek yogurt
  • 2 tablespoons Dill, chopped
  • 2 tablespoons Mint, chopped

Instructions

  1. Marinate the chicken breasts in olive oil, lemon juice, garlic, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked, let rest, then slice.
  3. Cook brown rice or quinoa according to package instructions.
  4. Prepare the tzatziki by mixing Greek yogurt with grated cucumber, dill, and garlic.
  5. Assemble bowls with a base of grains, topped with sliced chicken, chickpeas, tomatoes, red onion, and feta.
  6. Finish with tzatziki and fresh mint on top.

Notes

Store leftovers in separate airtight containers for up to 3 days. Tzatziki can be made ahead and kept in the fridge for 3-5 days.
