  • 4 boneless, skinless chicken breasts
  • 1 cup Greek yogurt
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the Greek yogurt, crumbled feta cheese, minced garlic, oregano, salt, and pepper in a bowl.
  3. Layer the chicken breasts in a casserole dish and spread the yogurt mixture over the chicken.
  4. Add the halved cherry tomatoes and chopped spinach on top, drizzling with olive oil.
  5. Cover with foil and bake for about 30 minutes.
  6. Uncover and bake for an additional 15 minutes until the chicken is cooked through.
  7. Serve warm over cooked rice or quinoa, if desired.

Notes
