A delightful Greek Chicken Flatbread that blends juicy shredded chicken, fresh vegetables, and creamy feta cheese for a taste of the Mediterranean.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 2 flatbreads or pita bread
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine shredded chicken, olive oil, lemon juice, oregano, salt, and pepper in a bowl. Mix until well-coated.
  3. Place flatbreads on a baking sheet.
  4. Top each flatbread with the chicken mixture, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  5. Bake in the preheated oven for 8-10 minutes or until crispy.
  6. Remove from the oven, slice, and serve warm.

Notes

Use leftover rotisserie chicken for faster prep. Can substitute with whole-grain wraps for a healthier option.
