A flavorful Greek Chicken dish infused with tangy lemon, fragrant oregano, and served with a fresh salad of feta and vegetables.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the marinade mixture over the chicken.
  4. Bake for 25-30 minutes or until the chicken is cooked through.
  5. In a separate bowl, combine feta cheese, cherry tomatoes, cucumber, and red onion.
  6. Serve the chicken topped with the salad mixture.

Notes

For a smoky flavor, consider grilling the chicken. Leftovers can be stored in an airtight container for up to 3 days.
