Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup olives, pitted and sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the cottage cheese, cherry tomatoes, cucumber, olives, and red onion in a large mixing bowl.
