Delightful cheesecake bars with a buttery graham cracker crust, creamy Greek yogurt filling, and a crunchy pistachio topping.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 2 cups cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup honey
  • 1/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed pistachios for topping
  • Honey for drizzling on top

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Mix the graham cracker crumbs with the melted butter until well combined. Press into the bottom of the prepared dish.
  3. Beat the cream cheese until smooth and creamy. Add in the Greek yogurt, honey, and sugar; mix until velvety.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Pour the cheesecake mixture over the crust, spreading it evenly.
  6. Bake for 25-30 minutes until the center is set and slightly jiggles.
  7. Cool the cheesecake, then refrigerate for at least 2 hours to firm up.
  8. Top with crushed pistachios and drizzle with honey before serving.

Notes

For a gluten-free version, use almond flour instead of graham cracker crumbs. Store in an airtight container for up to 5 days.
