Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • Olive oil for cooking
  • Cooked rice or quinoa
  • Toppings (such as cucumber, tomato, feta cheese, and tzatziki sauce)

Instructions

  1. Combine ingredients in a mixing bowl and mix until well combined.
  2. Shape the mixture into meatballs, about 1.5 inches in diameter.
  3. Sauté meatballs in olive oil over medium heat until browned and cooked through, about 10-15 minutes.
  4. Serve meatballs over a bed of cooked rice or quinoa.
  5. Garnish with fresh toppings such as cucumber, tomatoes, feta cheese, and tzatziki sauce.

Notes
