A vibrant and refreshing Greek Orzo Salad packed with fresh vegetables and feta cheese, perfect for summer gatherings.

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to the package instructions. Once it’s perfectly al dente, drain it and rinse it under cold water to stop the cooking process.
  2. Combine the cooled orzo, halved cherry tomatoes, diced cucumber, diced red onion, sliced Kalamata olives, crumbled feta cheese, and chopped parsley in a large bowl. Give it a gentle toss to combine.
  3. Whisk together the olive oil, red wine vinegar, salt, and pepper in a small bowl to create the dressing.
  4. Dress the salad by pouring the dressing over it and tossing gently until everything is coated.
  5. Serve the salad chilled or at room temperature, and enjoy!

Notes

For best flavor, chill the salad for an hour before serving. Add cucumbers fresh if you prefer a crunch.
