A vibrant and refreshing Greek Pasta Salad featuring al dente pasta, fresh vegetables, and tangy feta, perfect for summer gatherings.

Ingredients

  • 8 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and allow to cool completely.
  2. Prepare the fresh ingredients and combine the cooled pasta, cherry tomatoes, cucumber, red onion, olives, and feta in a large bowl.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a small bowl.
  4. Dress the salad by pouring the dressing over it and tossing gently to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.
