Ingredients

  • 2 salmon fillets
  • 5 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Place the salmon fillets on a baking sheet and season with salt and pepper. Bake for 15-20 minutes until cooked through.
  2. Grab a large bowl and combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Let the salmon cool slightly, then flake it into bite-sized pieces.
  5. Add the flaked salmon to the salad mixture, drizzle with dressing, and toss gently to combine. Serve immediately.

Notes

For a different flavor, substitute mixed greens with arugula or spinach, and add fresh herbs.
