  • 1 bell pepper, cut into pieces
  • 1 onion, cut into pieces
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Preheat the grill to medium-high heat, ensuring it’s hot and ready for those kabobs to sear beautifully.
  2. Combine the olive oil, garlic powder, paprika, salt, and pepper in a bowl to create a flavorful marinade for the chicken.
  3. Add the chicken cubes to the marinade, tossing to coat each piece evenly. Let the chicken soak in that flavor while you prepare the veggies.
  4. Thread the marinated chicken and vibrant vegetables onto the skewers, alternating between them for a colorful presentation.
  5. Place the skewers on the preheated grill and grill for 10-15 minutes, turning occasionally. Cook until the chicken is no longer pink and has a beautiful char.
  6. Once done, remove the kabobs from the grill and serve them hot. Enjoy with your favorite dipping sauce!

Notes

For best results, soak wooden skewers in water for at least 30 minutes before grilling to prevent burning. You can prep the kabobs a few hours ahead and keep them covered in the fridge until you’re ready to grill.
