These grilled chicken tacos are a celebration of flavors with tender marinated chicken, fresh toppings, and warm tortillas, perfect for any occasion.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 corn tortillas
  • 1 cup diced tomatoes
  • 1/2 cup chopped onion
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat to ensure an even cooking surface for your chicken.
  2. In a bowl, mix together olive oil, chili powder, cumin, salt, and pepper to create a delicious marinade for the chicken.
  3. Coat the chicken breasts in the marinade, making sure every inch is covered. Let marinate for 15 minutes to deepen the flavors.
  4. Place the chicken on the hot grill and cook for 6-7 minutes per side, or until it’s fully cooked and reaches an internal temperature of 165°F.
  5. Once done, let the grilled chicken rest for a few minutes. This is key to keeping it juicy!
  6. While the chicken rests, warm the corn tortillas on the grill for about 30 seconds on each side until they’re just tender.
  7. Now comes the fun part! Start assembling your tacos by adding sliced chicken, diced tomatoes, chopped onion, sliced avocado, and fresh cilantro to each tortilla.
  8. Serve your tacos with lime wedges on the side for that perfect zing!
