A nostalgic grilled cheese sandwich with melty cheeses, savory deli meats, and roasted red peppers.

Ingredients

  • 4 slices of sourdough bread
  • 1 tablespoon of unsalted butter, softened
  • 2 cups of shredded mozzarella cheese
  • 1 cup of shredded provolone cheese
  • 1/2 cup of grated Parmesan cheese
  • 1/2 pound of thinly sliced deli meats (such as salami, capicola, or turkey)
  • 1/2 cup of roasted red peppers, sliced
  • 1/4 cup of mayonnaise
  • 1 tablespoon of Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by slicing bread and red peppers.
  2. Mix the cheeses in a bowl and set aside.
  3. Spread mayonnaise on one side of each slice of bread.
  4. Sprinkle Italian seasoning over the mayonnaise.
  5. Layer half of the cheese mixture on two slices of bread.
  6. Add a layer of deli meats over the cheese.
  7. Follow with a layer of roasted red peppers.
  8. Top with the remaining cheese mixture.
  9. Preheat a skillet over medium heat.
  10. Cook the sandwiches for 3-4 minutes until golden brown.
  11. Flip and cook for another 3-4 minutes until cheese is melted.
  12. Remove from skillet, let rest for a minute, then slice.
  13. Serve hot with your choice of dipping sauces.

Notes

For extra flavor, customize with different cheeses or deli meats as desired.
