A modern twist on a classic beef casserole, this dish features cauliflower rice for a guilt-free comfort meal that’s easy to prepare.

Ingredients

  • 1 lb ground beef
  • 1 head cauliflower (or 4 cups cauliflower rice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onion and garlic in olive oil over medium heat until translucent.
  3. Brown the ground beef until cooked through.
  4. Stir in the diced tomatoes, Italian seasoning, salt, and pepper.
  5. Rice the cauliflower using a food processor and add it to the beef mixture.
  6. Transfer the mixture to a greased casserole dish and sprinkle cheese on top.
  7. Bake for about 25-30 minutes until the cheese is melted and bubbly.
  8. Serve warm and enjoy!

Notes

For a healthier version, substitute lean ground turkey and low-fat cheese. Leftovers store well in an airtight container for 3 days or freeze for up to 2 months.
