  • 1 lb ground beef (85/15 lean-to-fat ratio recommended)
  • 1 tbsp olive oil
  • 1/4 cup hot honey
  • 2 tbsp low-sodium soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tsp sriracha or chili sauce (optional, adjust to spice preference)
  • 2 cloves garlic (minced)
  • 3 cups cooked jasmine rice (about 1 cup uncooked)
  • 1 cup carrots (shredded)
  • 1 cup cucumber (diced)
  • 1/2 cup green onions (chopped)
  • 1/4 cup sesame seeds (toasted preferred)
  • 1 tbsp fresh cilantro (chopped, optional)

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering, about 1-2 minutes.
  2. Add ground beef and let cook undisturbed for 3-4 minutes. Break up the beef and continue cooking until fully browned and crispy, about 5-7 minutes total.
  3. Drain excess fat from the skillet, leaving about 1 tablespoon.
  4. While the beef cooks, whisk together hot honey, soy sauce, rice vinegar, sriracha (if using), and minced garlic until smooth.
  5. Pour the sauce over the beef and stir to coat. Cook for 1-2 minutes until the sauce thickens.
  6. Divide cooked rice among four bowls. Top each with hot honey beef.
  7. Arrange shredded carrots, diced cucumber, and chopped green onions around the beef.
  8. Finish with sesame seeds and fresh cilantro. Serve immediately.
