A comforting and nutritious dish, these Ground Turkey Stuffed Peppers are easy to make and perfect for family dinners.

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14 oz)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting off the tops and removing the seeds.
  3. Sauté the chopped onion and minced garlic in olive oil until softened.
  4. Brown the ground turkey in the skillet, seasoning with salt and pepper.
  5. Mix in the cooked rice, diced tomatoes, and Italian seasoning.
  6. Stuff each bell pepper with the turkey and rice mixture.
  7. Assemble the stuffed peppers in a baking dish and cover with aluminum foil.
  8. Bake for 30 minutes.
  9. Add shredded cheese on top and bake for an additional 10-15 minutes.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. These stuffed peppers can also be frozen for up to 3 months.
