A comforting one-pan meal featuring roasted sweet potatoes and seasoned ground turkey, perfect for busy weeknights.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat, letting the oil shimmer gently.
  2. Add chopped onion and minced garlic to the skillet, cooking until softened and fragrant, about 3-4 minutes.
  3. Introduce the ground turkey into the skillet. Stir frequently until it’s nicely browned and fully cooked, about 5-7 minutes.
  4. Stir in your diced sweet potatoes and chopped bell pepper, blending them into the mix.
  5. Sprinkle in the paprika, cumin, salt, and pepper. Stir well and cook until the sweet potatoes are tender, about 10-15 minutes.
  6. Sprinkle fresh parsley on top before serving.

Notes

Serve warm with garlic bread or a fresh salad. Leftovers can be stored in the refrigerator for up to 4 days.
