Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Toppings: shredded cheese, avocado, salsa, cilantro

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the chopped onion and minced garlic until the onion softens.
  3. Brown the ground turkey until it is nicely crumbled and cooked through.
  4. Stir in the taco seasoning, following the package instructions.
  5. Assemble your base in a separate bowl with rice or quinoa, black beans, corn, and diced tomatoes.
  6. Top the base with the turkey mixture, adding flavor and protein.
  7. Customize the bowls with your favorite toppings and serve immediately.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Warm them up before serving.
