A delightful quiche with a crispy hashbrown crust, filled with eggs, cheese, and vegetables, perfect for brunch gatherings.

Ingredients

  • 2 cups hash browns
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large eggs
  • 1 cup milk
  • 1 cup diced vegetables (bell peppers, onions, spinach, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Press the hash browns into the bottom and up the sides of a greased pie dish to form a crust. Bake for 20 minutes until golden brown and crispy.
  3. Whisk together the eggs, milk, salt, and pepper until well combined.
  4. Stir in your shredded cheese and diced vegetables into the egg mixture.
  5. Pour the egg mixture over the hash brown crust.
  6. Bake for an additional 25-30 minutes or until the quiche is set and the top is lightly golden.
  7. Let it cool for a few minutes before slicing and serving.

Notes

For an even crispier crust, squeeze out excess moisture from the hash browns before pressing them into the pie dish.
