A delightful combination of juicy chicken, sweet pineapple, and vibrant bell peppers that transports you straight to a tropical paradise.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon garlic powder
  • 1 tablespoon ginger (fresh or powdered)
  • 1 green bell pepper (sliced)
  • 1 red bell pepper (sliced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by mixing soy sauce, brown sugar, garlic powder, and ginger. Allow it to marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat and cook the chicken, browning on both sides for about 5-7 minutes per side.
  3. Add the sliced bell peppers and pineapple to the skillet and cook for an additional 5-7 minutes.
  4. Serve hot, garnished with extra pineapple or peppers if desired.

Notes

For more flavor, marinate the chicken overnight. You can also use shrimp or firm tofu as substitutes for the chicken.
