A tropical dish featuring grilled chicken marinated in a vibrant mix of flavors, complemented by caramelized pineapple and bell peppers.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon ketchup
  • 1 tablespoon vegetable oil
  • 1 fresh pineapple, sliced
  • 1 bell pepper (red or yellow), sliced
  • Salt and pepper to taste

Instructions

  1. Whisk together pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, ketchup, and vegetable oil in a bowl.
  2. Add the chicken breasts to the marinade, cover, and refrigerate for at least 1 hour, or up to overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade, letting the excess drip off, and season with salt and pepper.
  5. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  6. Add the sliced pineapple and bell peppers to the grill in the last few minutes of cooking.
  7. Layer the grilled chicken with the pineapple and bell peppers for serving.
  8. Serve warm and enjoy!

Notes

For extra depth of flavor, consider adding a splash of sesame oil to the marinade. Can also use a grill pan or broiler.
