A comforting casserole that combines shredded chicken, broccoli, and Greek yogurt for a healthier twist.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 cup brown rice, cooked
  • 1 can cream of chicken soup (light or low fat)
  • 1 cup Greek yogurt
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, broccoli florets, cooked brown rice, cream of chicken soup, Greek yogurt, half of the cheddar cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Mix everything until well combined.
  4. Transfer the mixture to a greased casserole dish, spreading it evenly.
  5. Top with the remaining cheddar cheese and breadcrumbs, if using.
  6. Bake in the preheated oven for about 25-30 minutes, or until heated through and bubbly.
  7. Cool for a few minutes before serving.

Notes

For a vegetarian version, substitute chicken with lentils or chickpeas. It can be prepared ahead of time and stored in the fridge.
