A comforting soup that captures the essence of cabbage rolls with wholesome ingredients and big flavors.

Ingredients

  • 1 lb lean ground beef
  • 1 small head of green cabbage, chopped
  • 1 cup rice
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat until it’s no longer pink. Drain any excess fat if necessary.
  2. Sauté the diced onion and minced garlic in the pot until softened, about 3-4 minutes.
  3. Mix in the chopped cabbage and rice, ensuring all the flavors are well combined.
  4. Combine the tomato sauce and beef broth, seasoning generously with salt and pepper.
  5. Bring the mixture to a boil.
  6. Simmer uncovered for about 30 minutes, or until the rice is tender and the cabbage has softened.
  7. Serve the soup in bowls and garnish with chopped parsley if desired.

Notes

For leftovers, store in an airtight container in the refrigerator for up to 3 days. It freezes well for 2-3 months.
