A creamy, health-conscious twist on traditional mashed potatoes using cauliflower.

Ingredients

  • 1 head cauliflower
  • 1/4 cup milk (or dairy-free alternative)
  • 2 tablespoons olive oil or butter
  • Salt to taste
  • Pepper to taste
  • Garlic powder (optional)

Instructions

  1. Chop the cauliflower into florets and steam until tender, about 10 to 12 minutes.
  2. Transfer the steamed cauliflower to a food processor.
  3. Add milk, olive oil or butter, salt, pepper, and garlic powder if desired.
  4. Blend until silky smooth and adjust seasoning as needed.
  5. Serve warm as a healthy alternative to mashed potatoes.

Notes

For an even creamier texture, add more milk when blending. Lemon juice can add a nice tang.
