A nourishing, satisfying casserole that blends tender chicken with cauliflower rice and a medley of vegetables in a creamy sauce.

Ingredients

  • 2 cups cauliflower rice
  • 1 lb chicken breast, cooked and shredded
  • 1 cup broccoli florets
  • 1 cup bell peppers, diced
  • 1 cup shredded cheese (optional)
  • 1 can cream of mushroom soup (or a homemade version)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven to 375°F (190°C).
  2. Combine the cooked chicken, cauliflower rice, broccoli, bell peppers, cream of mushroom soup, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased casserole dish and spread it out evenly.
  5. Cheese it Up by sprinkling shredded cheese on top (optional).
  6. Bake in the preheated oven for 25-30 minutes until heated through and cheese is bubbly.

Notes
