Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/2 banana, mashed
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Optional mix-ins: chocolate chips, nuts, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rolled oats, protein powder, and baking powder in a large bowl.
  3. Mix together the mashed banana, honey or maple syrup, almond butter or peanut butter, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in your optional mix-ins like chocolate chips, nuts, or dried fruit.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to 5 days, or freeze them for up to 2 months.
