Ingredients

  • 4 cups mixed greens (spinach, arugula, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced (any color)
  • ½ cup red onion, thinly sliced
  • 1 avocado, cubed
  • ½ cup cooked quinoa (optional)
  • ¼ cup feta cheese, crumbled (optional)
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley), chopped for garnish

Instructions

  1. Prepare the greens by washing and drying them thoroughly.
  2. Chop the vegetables: cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Add the cubed avocado to the mixed greens.
  4. Cook the quinoa in boiling water for 15 minutes, then let it cool.
  5. Prepare the dressing by whisking olive oil, lemon juice, salt, and pepper.
  6. Combine the dressing with the salad, ensuring everything is well coated.
  7. Garnish with fresh herbs and serve immediately.
