Delicious and nutritious egg rolls filled with black beans, corn, and bell peppers, perfect for any occasion.

Ingredients

  • Egg roll wrappers
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup bell peppers, finely chopped (any color)
  • 1/2 cup onion, finely chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup cheese (optional)
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Mix the filling: In a bowl, combine the black beans, corn, finely chopped bell peppers, onion, and spices. Mix them well until every ingredient is coated with the spices.
  2. Spoon the flavorful mixture onto the center of the egg roll wrappers. Fold the wrappers gently, sealing the edges with a little water.
  3. Heat oil in a pan over medium heat. Carefully place the egg rolls in the hot oil, allowing them to fry until they are golden brown and crispy.
  4. Remove the egg rolls from the oil and let them drain on paper towels. Serve them hot for the best experience.

Notes

To make them even crispier, you can double fry them. Store leftovers in an airtight container for up to 3 days.
