Delightfully refreshing lemon cheesecake bars with a graham cracker crust, topped with luscious lemon curd.

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 4 large eggs
  • 1/4 cup lemon juice
  • 2 tablespoons lemon zest
  • 1 cup lemon curd (for topping)
  • Whipped cream (for garnish, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl; press into the bottom of the dish.
  3. Beat cream cheese and 1 cup sugar until smooth, then add in eggs one at a time, mixing well after each. Stir in lemon juice and lemon zest.
  4. Pour the cheesecake mixture over the graham cracker crust.
  5. Bake for 30-35 minutes or until the center is set with a slight jiggle.
  6. Cool completely, then refrigerate for at least 4 hours.
  7. Spread lemon curd over the chilled cheesecake bars.
  8. Cut into bars and garnish with whipped cream if desired before serving.

Notes

Use room temperature cream cheese for a smoother mixture. Don’t overbake to maintain texture.
