An elegant yet comforting meal featuring herb-infused salmon paired with crispy baby potatoes.

Ingredients

  • 4 salmon fillets (6 oz each, skin-on or skinless)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley or dill, for garnish
  • Baby potatoes (quantity as desired)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
  3. Take your salmon fillets and generously rub the herb mixture all over them.
  4. Place the coated salmon fillets on a lined baking sheet in a single layer.
  5. Slice the baby potatoes in half and toss them with olive oil, salt, and pepper.
  6. Arrange the seasoned baby potatoes around the salmon on the same baking sheet.
  7. Bake for 15-20 minutes, until the salmon flakes easily and the potatoes are golden and tender.
  8. Garnish your dish with fresh parsley or dill and serve hot.
