A healthy and delicious breakfast bake combining cottage cheese, oats, and blueberries for a protein-packed start to your day.

  • 2 cups cottage cheese
  • 1 cup oats
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup almond milk (or any milk of choice)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the cottage cheese, oats, almond milk, eggs, honey, vanilla extract, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Fold in the blueberries gently.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 30-35 minutes until golden and set.
